The SAMOSA dish are found in 10th century from Arab cooking recipe book, they are called “sanbusak”, later period we are called “samosa”.

INGREDIENTS:

  1. All purpose flour= 1 cup
  2. Water to knead dough
  3. Oil= 1/2 liter
  4. 4-5 potatoes (boiled, mashed & peeled)
  5. Green peas= 1/2 cup (boiled)
  6. Green chilies= 1 or 2 (chopped)
  7. Ginger= 1/2 tablespoon(crushed)
  8. Coriander= 1 tablespoon (chopped)
  9. Few chopped cashews(optional)
  10. Ajwain = 1/4 tablespoon(optional)
  11. Few Raisins(optional)
  12. Garam masala= 1/2 tablespoon
  13. Red chili powder to taste
  14. Salt to taste

FOR COVER:

  • First we take a large bowl and mix all the ingredients ( oil, salt, ajwain) except water . And then add a little bit of water at a time.
  • Pat and knead well for many times into a soft pliable dough.Cover it with damp cloth and keep aside for 15 to 20 minutes.

FOR STUFFING:

  • Next step we take an another large bowl and add mashed potatoes and add all dry masalas (dry masalas are:salt, garam masala, chili powder) and ginger , green chilies and then mixed well.
  • And we add green peas, raisins and cashews and mixed well.
  • Last step we add coriander and keep aside .

TO MAKE SAMOSA:

  • First we make a little rolls of dough and roll it into a four diameter circle. Cut it into 2 components like semi-circle.(if you don’t understand , watch my video)
  • And then we take a half circle and roll it like cone. Use water while doing thus. And place a spoon of filling with in the cone and seal the third side using a drop of water.
  • Heat oil in a big pan and deep fry until golden brown (fry on a medium flame).
  • And finally we make samosa and then serve hot samosa with chutney or tomato sauce.
