INGREDIENTS (BARBECUE BRISKET)

  • Beef brisket=5kg/11 piece
  • Beef stock=500ml/ 18

For the barbecue sauce

  • Sunflower oil = 1 tablespoon
  • Onion = 1
  • Garlic cloves = 3( chopped )
  • Tomato ketchup = 500ml
  • Worcestershire sauce = 100ml
  • Lemon juice = 2 (75ml)
  • Brown sugar = 2 tablespoon
  • Malt vinegar = 1 tablespoon
  • Dijon mustard = 2 tablespoon
  • Chilli flakes = 1 spoon( crushed )
  • Tabasco sauce = 1 spoon
  • Dried thyme = 1 spoon

METHOD (BARBECUE BRISKET)

  1. First we make the sauce, and heat the oil during a cooking pan, then cook onion and garlic for a couple of minutes until soft.
  2. And add the remainder of the sauce ingredients to the pan with a decent pinch of salt and simmer for twenty minutes.And then use a hand mixer or food processor to whiz to a swish puree.
  3. Heat oven to 150c/130c fan/gas. And build the rub by mix all the ingredients along with a pinch of salt.
  4. Rub the combo everywhere the meat and put aside.And we take a big roasting tin, combine the meat stock and 1/2 the sauce.
  5. Add the cut to the tin , and cover tightly with foil ,then cook for 4-5 hrs till the meat is actually tender after you push a fork into it.
  6. The meat is often ready the night before- simply leave it to chill with in the tin lined with foil , however don’t refrigerate.
  7. Once finish the meat, and get a barbecue laid- off up and wait till the coals are fully ashen- you would like an occasional (not fierce) heat.
  8. Raise the meat out of the cooking tin and place on the barbecue to char. If your barbecue includes a lid ,shut it currently.
  9. Cook for about twenty minutes , turning it rigorously with pair of tongs, till light burn everywhere and heated through.
  10. And finally raise on to a board and serve sliced with the remaining sauce on the facet.
